    The Style: Firm texture with a good moisture content makes it a bit like custard. Edible rind.
    Flavor Profile: Browned butter, smoked nuts, hint of mushroom, sharp bite, earthy.

    How to Enjoy:: Firm rye crackers like Wasa; crispy apple slices like Honey Crisp; topped with local honey; serve with dried apricots or cranberries.
    Wine Pairings: Rioja, Barbera d’Alba, Beaujolais, Cotes du Rhone, sparkling Cava, tawny port.

    Extra Reading: The Meadow Creek Farm is located in Galax, VA on high elevation hills. The three breeds of cows are raised on organic feed, seaweed, and grasses. This cheese is aged eight months or more to concentrate the flavors and texture.
