    Cheese Wisdom: A creamy blue with with sweet and spiced notes

    Hand-poured Stilton made for over 100 years

    Where to Purchase: The Loyalist Market, Matthews
    Price: $31.99/lb.

    The Style: Semi-soft with crumbles on the edges. Deep, dark veins of blue mold.
    Flavor Profile: A mix of creamy texture with a very tangy pop of blue; complex, with caramel and nutmeg notes.

    How to Enjoy: After dinner with dry roasted almonds or walnuts and a glass of port. Add to a kale salad and serve with a hearty red. Pour a little local honey on it and serve with a sweet biscuit.
    Wine Pairings: Port, syrah, zinfandel, red Bordeaux, Rhone blend.

    Extra Reading: This cheese has been made by hand since its beginning in the 1920s. The cheese is hand-ladled into the aging mold; the man who hand-pours the cheese has been with the company for 40 years. It is then aged for 12 weeks. Cropwell Bishop has won many awards for its Stilton. It is one of only six PDO (Protected Designation of Origin) approved Stilton producers.
