    Cheese Wisdom: A goat cheese that looks like a volcano

    Ash-covered with a creamy, clean flavor

    The Style: Dense, creamy, spreadable and packed with fresh cream and grass aromas
    Flavor Profile: Cream, a very delicate goat milk funk, light vegetal notes, light chalk

    How to Enjoy: Spread on hearty crackers, or Honey Crisp apple. Set in the center of a charcuterie board as the volcano appearance centers the board’s focus. Serve with dried apricots, dried cherries and roasted, salted almonds. Place a small square on top of rich tomato bisque. As a delicious dessert, try it with a piece of 70% dark chocolate and raspberries.

    Wine Pairings:: Beaujolais, White Bordeaux, Vermentino, New Zealand Sauvignon Blanc or Pinot Noir, Sauternes

    Extra Reading: This cheese is formed into little mountain peaks, lightly coated in ash. The individual pieces are 120 grams each, so if you are building a cheese board for eight, we recommend two pieces on the board. The ash coating slowly extracts moisture from the cheese, yielding a very creamy low funk goat cheese that is rich and balanced.
