    The Waterman opening soon

    The seafood-focused restaurant will open in Sedgefield

    Editor’s note (10/8/18): The Waterman has pushed back its opening date a second time to October 15. This story has been updated to reflect that. 

    The Waterman Fish Bar, a Sedgefield seafood restaurant opening near the new Harris Teeter, will open on October 11. The restaurant comes from the names behind Uptown’s Sea Level NC.

    The preview menu released to media includes a low country boil, fried N.C. trout, and beer-battered cod, hinting at a restaurant that’s much more blue-collar than Sea Level. The craft cocktail menu is sea-themed, with a Captain Lewis (Four Roses bourbon, ginger syrup, blueberry puree, basil, and lemon) and a Pina Colada Float, which is served with a coconut popsicle.

    The restaurant is in a modern space, with a rooftop patio. The GM and chef of Sea Level, Jason Jepsky and Charles Landry, will move to the new place. The Waterman will serve dinner during the week and be open from brunch through dinner on weekends. Reservations will not be accepted.

    A press release announcing the opening date pointed out a few interesting facts. Dennis Thompson (Firebirds, Viva Chicken) and Frank Scibelli (Mama Ricotta’s, Yafo, Midwood Smokehouse) are partners in the newest restaurant, along with Sea Level’s Paul Manley and Andrew Chapman.

    It also states that the restaurant will only serve non-threatened species. Positions are open in both front of back of house; those interested can apply to waterman@sealevelnc.com. —Kristen Wile
