    Q&A: Why are restaurant openings never on time?

    Each week, we answer your questions about food and drink in Charlotte

    Q: Restaurants always seem to have an opening date that is nowhere near when they actually open. Why is that?
    UP:
    There are always delays when restaurants are trying to get open, but they are getting worse and worse. With restaurants opening in a new build or converting retail space to a restaurant, there’s a lot more that needs to be done in terms of permitting, and permits can be a bulk of the delays. The construction boom around town means that good, reliable sub-contractors are in extremely high demand, making the work happen slowly. Throw in any other issue that may pop up, and you’re months behind schedule. Even cautious opening dates can end up being way too optimistic.

    Q: I heard that Mr. K’s is closing?!
    UP: We reached out to them, and no, Mr. K’s isn’t going anywhere. They were unsure of where the rumors came from that spurred an Instagram post from artist David French bidding them farewell.

    Q: Where is Miranda Brown now that she’s left The Asbury?
    UP: You can find her temporarily at 300 East, where she is a familiar face in the kitchen. She was sous pastry chef there before leaving to work at Flourshop, then The Asbury. Brown is filling in there, she says, and plans on taking time to complete some stages in the coming months. She also shares that she and her fiancé, Brent Martin, have something in the works, so stayed tuned on that!

    Q: What’s a good cookbook to give to a friend who loves to cook at home?
    UP: We’ve actually asked chefs to share the cookbooks that are inspiring them. I’d take any one off of this list!
