Dot Dot Dot has a new executive chef
There have been several changes in the cocktail bar’s kitchen
Cocktail bar Dot Dot Dot has a new executive chef. Former sous chef Corey Dawson has taken leadership of the kitchen, replacing Daniel Wheeler. Wheeler will be the opening chef at the new Hilton in SouthPark.
Dawson was first hired at Dot Dot Dot as a line cook with no experience, according to Dot GM Stephen Toth. David Quintana, who created the cocktail bar’s culinary identity, mentored Dawson in the kitchen, eventually promoting him to sous chef when Alex Verica departed to prepare for The Stanley’s opening. Dawson has worked at Dot Dot Dot for three years.
“While working under Daniel, Corey took on a lot of day to day execution of our culinary operation and has continued to impress,” Toth says. “We wanted to give Corey the opportunity to showcase what he’s learned and be able to execute his own style of food.”
Max Evans, former sous chef at Barrister’s, has been promoted to sous chef. —Kristen Wile
