Dilworth Tasting Room hires RockSalt chef
Jonathan Shuler will oversee a menu overhaul
Popular wine bar Dilworth Tasting Room has a new executive chef. Jonathan Shuler, who comes from the position of executive chef at Montford Park seafood spot RockSalt, has already begun making menu changes. More are to come.
Several wine bar must-haves will remain on the menu, such as the cheese and charcuterie plates and flatbreads. Shuler will add house-made pasta dishes to the menu, as well as seasonal salads sourced from local farms.
One of the things we’re excited to see take shape is a Croatian influence on the menu. Owner Jaffer Kovic is Croatian, and Shuler will serve Croatian-influenced dishes on his new menu. Jon and I took a trip to Croatia last April (read about that here in a story I wrote for Charlotte magazine), and were really impressed by the food. Much of the dishes’ deliciousness comes from how pure the terrain and growing methods are in the country, however, so we’ll be interested to see how that translates.
Dilworth Tasting Room did some small renovations to remove most of its retail space late last year, making space for a bigger dining room. —Kristen Wile
