Cheese Wisdom: Creamy, speadable cow’s milk cheese from France

    Fresh-tasting triple-cream with a slightly nutty note

    by Anita Skogland

    Tentation de Saint-Felicien, Rhone-Alps, France

Where to Purchase: Orrman’s Cheese Shop, Uptown
    Price: $14/ 6 oz. round.

The Style: Creamy, rich, butter-like, cheese with edible rind. Aged six weeks, made from pasteurized cow’s milk.
Flavor Profile: Fresh cream, cashew, delicate. A good backdrop for other flavors to shine.

How to Enjoy: Spread on crackers or baguette and top with thin slices of fresh strawberries or your favorite jam. Warm it up in a 325ºF oven for five minutes, or 20 seconds in a microwave, and spoon it onto fruit cake or pumpernickel bread, or toss with roasted carrots and beets.
Wine Pairings: Sparkling wines like Champagne, Cremant de Loire, Cava or Prosecco. Sparkling red Lambrusco, Vinho Verde or Picpoul.

Extra Reading: The cheese is blended with crème fraîche which adds to its creamy texture.
