Cheese Wisdom: A soft, creamy burst of cheese

Where to Purchase: The Loyalist Market, $35.99/lb.
The Style: Buffalo milk, and its high fat content, create a creamy texture in this mild cheese.
Flavor Profile: Hint of salt, cream, mouth filling and tart with a light ooze factor and a bloomy, edible rind.
How to Enjoy: Spread on crackers, bread, or apple slices topped with blueberry jam; serve slightly warm on summer tomato slices; enjoy on a cheese board with tiny grapes, olives, and dried apricots.
Wine Pairings: Dry sparkling wine, pinot grigio, albariño, soave, or arneis white wines, as well as chilled light red wines.
Extra Reading: The Gritti Brothers are the cheesemakers at Quattro Portoni in northern Italy. Water buffalo have been producing milk in southern Italy since the 10th century. The Gritti family decided to try raising and milking water buffalo in the cold temperatures of Lombardy. It was a labor of love but the final result is a delicious line up of buffalo milk cheeses.
