    Cheese Wisdom: A pimento cheese with a slight kick

    Southern classic made from an award-winning cheese

    The Style: Spreadable, lightly spiced pale orange cheese with a hint of sharp bite
    Flavor Profile: Medium spice, smoky, with a mix of piquant pepper, cheddar, and mayonnaise flavors.

    How to Enjoy: Stuff it into celery ribs; serve with tortilla chips; on a cheese board with sliced peppers and radish; spread on toast and add sliced tomato for a custom tomato sandwich; spread on cucumber slices; add a dollop to tomato soup.
    Wine Pairings: Riesling, Chardonnay, Rioja, Barbera d’Alba, Cabernet Franc, Merlot

    Extra Reading: Made from the dairy’s award-winning Thomasville Tomme. The Wehner family started to do rotational herding in 1993. Allowing their Jersey cows to wander and feed on open fields made a big improvement in the quality of their milk. As their cheese production grew in volume, they engaged the help of their daughter and her husband, Jessica and Jeremy, who now own the cheese operations. Sweet Grass cheeses have won several awards throughout the continent.
