Cheese Wisdom: A brie-like cheese made in North Carolina

Named for one of the state’s first settlements

Price: $9.99/four-ounce disk

The Style: Soft brie-like disc with a snow white bloomy edible rind and creamy aroma
Flavor Profile: Cream, butter, Crème Fraiche, light tang, and earthy notes. The goat’s milk used is winter milk, which is less grassy tasting than spring and summer milk

How to Enjoy: On a cheese board with dried fruit, smoked almonds, and rustic crackers. Serve a few slices on the side with scrambled eggs or kale salad
Wine Pairings: Sauvignon Blanc, Gruner Veltliner, Vinho Verde, Provence Rose, Beaujolais with a light chill 

Extra Reading: Climax is located near one of the first settlements in North Carolina named Snow Camp, this cheese’s namesake. It is also named Snow Camp due to its beautiful pure white rind. A blend of goat and cow milks, Goat Lady Dairy uses its own goats milk with the cow’s milk coming from a nearby farm. The cheese is aged 4-6 weeks.
