Restaurant recipe: 300 East’s French Onion Soup

The French onion soup at 300 East is as comforting as the restaurant itself, a mainstay dish of the restaurant in a historic home on East Boulevard. As a participating restaurant in our Charlotte StrEATs Festival, 300 East will be a part of the cookbook given to guests with a VIP ticket — and they’re sharing the secret to their beloved soup. 300 East’s French Onion Soup
Serves 8
Ingredients
3 medium yellow onions, halved and thinly sliced
5 tbsp. butter, melted
2½ qt. beef broth
½ tsp. black pepper
Sherry, to taste (suggestion: 1 cup)
8 slices gruyère, or cheese of your choice
10 slices French baguette, buttered and toasted until crisp
Directions
1. Heat butter over low to medium-low heat. Add onions and cook, stirring occasionally, until a deep golden brown. (This may take up to 2 hours.)
2. Add broth and pepper, then bring to a boil. Reduce heat, then cover and simmer for 30 minutes.
3. Stir in sherry, then adjust salt to taste.
4. Divide soup among 8 single-serving crocks. Float a slice of baguette in each crock and top with cheese.
5. Place in the oven and broil until cheese develops a bubbly brown crust. Serve immediately.
