Q&A: Mazi closing, “blue collar” wine pairings

Q: I just found out Mazi closed after only four months. What happened?
Tom: I think just about all of Charlotte’s dining and culinary community was shocked when it was announced Mazi permanently closed after last night’s service. We reached out to Built on Hospitality partner Chris Coleman to get some insight. BOH was managing the concept for its investors. He told us, “We regret to share that Mazi’s last day was July 30. We’re grateful to the culinary, beverage, service, and leadership team there who crafted a unique experience and some of the best food and drinks we’ve seen in Charlotte, recognized not just by us but by a number of respected media outlets. Thank you to everyone who supported Mazi, and thank you to the owners for trusting Built On Hospitality with the culinary and beverage operations of the restaurant. While this chapter is coming to an end, we remain hopeful and committed to our remaining concepts and to new concepts and partnerships coming in the near future.”
Q: Please settle a bet. Is it okay to drink really good wines with, let’s just say. “blue collar” foods — or is it a waste?
Tom: It’s way more than ok, it’s awesome. High-end champagnes or sakes with popcorn is one of my favorite things — talk about a great movie night. Same combo options for fried chicken. Pepperoni pizza with an quality chianti is amazing. For a real mind blower, try a nice Napa Valley Cabernet with Flamin’ Hot Cheetos.
