Chef Alyssa’s Kitchen kicks off guest chef series

Ashely Boyd and Bruce Moffett are among the guests


Chef Alyssa’s Kitchen is kicking off a guest chef series, with some of the city’s top names in restaurants leading classes at the LoSo cooking school. Chef Alyssa’s Kitchen owners Alyssa and Andrew Wilen recently welcomed their second child, a baby boy named Arlo, to the family, and the guest chef series helps Chef Alyssa temporarily step away from leading classes to take a modified maternity leave.

Wednesday, Feb. 24 brings Brian Stockholm of Papi Queso food truck and food stall in Optimist Hall. Stockholm’s annual Gourmet Grilled Cheese Workshop includes how to make toppings that upgrade the classic sandwich, including caramelized onions, maple-coriander bacon, and pickles. His session is currently sold out, but guests can sign up for a waitlist.

Chef Eric Ferguson leads a spring Italian class on March 18. The former Stagioni chef recently started his own business, L’Ostrica, a seasonal, chef-driven home meal service. Guests will learn how to make classic ravioli, as well as seared fish with roasted mushrooms and pickled fennel, with a lemon curd tart topped with strawberries and a diplomat cream for dessert.

Chef Bruce Moffett’s class has already sold out, with waitlist space available. The $210 ticket also includes a signed copy of Moffett’s cookbook, Cooking with Bruce Moffett. The menu best reflects cuisine you’d find at his restaurant Barrington’s in SouthPark: tomato soup, bacon-wrapped North Carolina trout, and lemon squares.

As warm weather hits, Chef Ashley Boyd will teach a class on desserts a la mode on March 30. Boyd will teach guests how to make ice cream and sorbet bases, and how to incorporate seasonal ingredients, and attendees will taste various ice creams before heading home with a base they created themselves to churn at home. Though she recently transitioned to oversee both savory and sweet sides of the menu at 300 East, Boyd has long been known for her skills as a pastry chef.

Family Table Meals and the regular class schedule will continue as well, with sessions taught by chef Gloria Sellers. Subjects include pub fare and basic meals bootcamp.
